I recently got a new printer (used, from a friend), and it seemed OK until I tried printing a photo from Adobe Photoshop. It turned out all grayish-green and inky, especially over the white surfaces. I tried different photos, and they all turned out the same, so it's not a one-time fluke. What do I do?

Your color profile must be messed up. Make sure that you select the proper color profile in Control Panel / Printers / etc. before printing. The profile that's selected now apparently doesn't work, my guess would be that Photoshop "optimized" it in a way that doesnt agree with your Epson. Select the printer's default one and see what happens.
