Hey there! I would like to apply a gpo to all computers in the domain except servers. What I’m looking for exactly is for windows to automatically update and restart workstations every night but not the servers. Is there anyone here who knows how this should be done? Thanks!

It can be done by creating a group called ‘Servers’. You should add all the servers to this group and then apply the domain level policy to this group or, in your case, do not apply policy to this group. Just bear in mind that domain level policies overwrite the local ones.
There may be some other way but I can’t think of one right now. I hope this helps.
